Dairy-Free Earl Grey Milk Tea Pudding Recipe

This 4-ingredient dairy-free and vegan milk tea pudding is simple to make! It’s a light dessert that’s aromatic and has a soft, smooth texture.

Getting the ingredients

I’ve been on a cooking and baking kick lately, and this is one that I’ve really enjoyed! While you can use a simple cup or ramekin for the pudding, I used a cute bear and ice cream mold that I bought from Hello Tokyo for $2 each! There are other options that you can find on Amazon as well, such as this animal mold. You have the option of adding black sugar tapioca pearls, but it honestly tastes fine without it.

You could potentially use any Earl Grey tea, but I found that the Numi Organic Aged Earl Grey Black Tea was excellent in this recipe because it added a rich flavor and nice aroma to the almond milk. It also created a delightful milk tea that became a jiggly pudding with the use of agar agar powder. For the condensed milk, I used Nature’s Charm Sweetened Condensed Oat Milk that turned out quite well in this recipe.

Making the milk tea pudding

First, combine and heat up the 1 cup of unsweetened almond milk and 2 Tbsp of sweetened condensed oat milk in a small sauce pan over medium heat. When it is bubbling around the edge, turn off the heat. Add the two Earl Grey tea bags (with tags hanging outside the sauce pan) to steep in the milk for about 5 minutes or until it turns into a brown milk tea color. Using a spoon to press the tea bags against the side of the sauce pan on and off will help speed up the process.

The longer you let the tea bags steep in the milk, the more pronounced the Earl Grey black tea becomes in the pudding. Next, add the agar agar powder to the sauce pan and whisk until mixed in thoroughly. Bring the mixture to a boil over medium heat and then remove off the heat immediately. Agar agar powder needs to be boiled in order to melt and activate the setting properties (this is a very important step or else your mixture will not set!). Whisk again to make sure everything is blended.

Pour the mixture evenly into cups, ramekins, or fun food molds. I used a bear and ice cream-themed one, but feel free to use whatever you prefer. This recipe fits perfectly into one ramekin. If you’re using a food mold, I recommend putting it on top of a baking sheet to make it easier to put in and remove from the refrigerator.

Refrigerate about 3 hours or until set and then serve! This is optional, but you can top the pudding off with some cooked black sugar tapioca pearls. This will add a chewy texture and additional flavor.

Ingredients
  

  • 1 cup unsweetened almond milk

  • 1/2 tsp agar agar powder
  • 1/2 cup cooked black sugar boba as a topping (optional)

Instructions
 

  • In a small sauce pan, combine the almond milk and condensed oat milk and bring the heat to medium.
  • Once it's bubbling around the edge, turn off the heat and add the Earl Grey tea bags to the sauce pan with tags hanging outside the sauce pan. Let the tea bags steep for about 5 minutes or until the color turns milk tea brown. (Use a spoon to press on the tea bags against the side of the sauce pan on and off to speed up the color-changing process.)
  • After the color turns milk tea brown, discard the tea bags. Add the agar agar powder and whisk until mixed in thoroughly. Bring to a boil over medium heat and then remove off heat immediately. Whisk again until well blended.
  • Pour the mixture evenly into smalls cups, ramekins, or fun food molds.
  • Refrigerate for about 3 hours or until set. Enjoy!
